Mackerel Stew Recipe
Ingredients:
- 1 kg Mackerel Fish
- 1 Lemon/Lime Juice Water
- 2 cm Galangal
- 1 cm Ginger
- 2 tsp Turmeric Powder
- 3 tsp Chili Powder
- 2 tsp Coriander
- 1 tsp Pepper Powder
- 5 Candlenut
- 6 Red Onion
- 3 Garlic
- 10 Small Green Chili
- Curry Leave
- Salt to Taste
For Fish Wrapping:
- Banana Leaf
- Toothpick
Method:
- Clean fish, take out the intestines but not egg
- Make three diagonal slashes on both of side of the fish then marinate with lemon/lime juice water for 10 minutes.
- Grind all the ingredients except curry leave, add salt and curry leave. Mix well.
- Marinate fish with the paste ingredients. Put small ingredients and curry leave inside fish belly.
- Let stand for 10 minutes spice paste ingredients to immerse.
- Wrapping with banana leave and hook with toothpick.
- Stew for 10 minutes.
- Mackerel Stew is ready to serve
